Mānuka Honey and Almond Flour Brownies

Ingredients (makes 9 squares):

  • 1½ cups (150 g) almond flour
  • ¼ cup (60 ml) pure Mānuka honey
  • ¼ cup (60 ml) melted coconut oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ tsp sea salt
  • ¼ cup (30 g) cocoa powder
  • ⅓ cup chopped dark chocolate or cacao nibs (optional)
  • Optional – a handful of crushed or chopped almonds

Instructions:

  1. Pre-heat oven to 175 °C (350 °F). Line a 20 cm (8-inch) square baking tin with baking paper.
  2. In a mixing bowl, whisk together the eggs, Mānuka honey, melted coconut oil and vanilla until smooth.
  3. Add almond flour, cocoa powder, and sea salt. Stir until a thick batter forms. Fold in dark chocolate pieces if using.
  4. Pour the batter into the prepared tin and spread evenly. Bake for 20-22 minutes or until the centre is set but still slightly gooey (it will continue to firm as it cools).
  5. Remove from oven and let cool in the tin for 10 minutes, then transfer to a wire rack to cool completely. Cut into 9 squares.
  6. Store in an airtight container for up to 4 days. For a chilled version, refrigerate and serve cold with a dollop of Greek yoghurt.
