Mānuka Honey and Almond Flour Brownies

Ingredients (makes 9 squares):
- 1½ cups (150 g) almond flour
- ¼ cup (60 ml) pure Mānuka honey
- ¼ cup (60 ml) melted coconut oil
- 3 large eggs
- 1 tsp vanilla extract
- ½ tsp sea salt
- ¼ cup (30 g) cocoa powder
- ⅓ cup chopped dark chocolate or cacao nibs (optional)
- Optional – a handful of crushed or chopped almonds
Instructions:
- Pre-heat oven to 175 °C (350 °F). Line a 20 cm (8-inch) square baking tin with baking paper.
- In a mixing bowl, whisk together the eggs, Mānuka honey, melted coconut oil and vanilla until smooth.
- Add almond flour, cocoa powder, and sea salt. Stir until a thick batter forms. Fold in dark chocolate pieces if using.
- Pour the batter into the prepared tin and spread evenly. Bake for 20-22 minutes or until the centre is set but still slightly gooey (it will continue to firm as it cools).
- Remove from oven and let cool in the tin for 10 minutes, then transfer to a wire rack to cool completely. Cut into 9 squares.
- Store in an airtight container for up to 4 days. For a chilled version, refrigerate and serve cold with a dollop of Greek yoghurt.
