Mānuka Honey Banana Muffins

Bake up soft banana muffins sweetened with Mānuka honey – a healthy snack kids (and adults) will ask for again and again!
Ingredients (makes 12 muffins):
- 2 ripe bananas, mashed.
- 1/4 cup (60 ml) Mānuka honey
- 1/4 cup (60 ml) melted coconut oil or butter.
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups (180 g) whole-meal flour
- ½ tsp baking soda
- 1 tsp baking powder
- ½ tsp ground cinnamon
- Pinch of salt
- Optional: 1/3 cup chopped walnuts, nuts, or dark chocolate chips
Instructions:
- Pre-heat the oven to 180 °C (350 °F). Line a 12-cup muffin tray with paper liners or grease lightly.
- In a large bowl, mash the bananas until smooth. Stir in the Mānuka honey, melted coconut oil (or butter), eggs, and vanilla until well combined.
- In a separate bowl, whisk together the whole-meal flour, baking soda, baking powder, cinnamon, and salt.
- Add the dry ingredients to the wet mixture and stir until just combined. If using, fold in walnuts or chocolate chips.
- Divide the batter evenly among the muffin cups. Bake for 18–20 minutes or until a skewer inserted into the centre of a muffin comes out clean.
- Remove from oven and allow to cool for 5 minutes in the tray, then transfer to a wire rack to finish cooling.
- Serve warm or at room temperature. These muffins keep well in an airtight container for up to 3 days or in the fridge for up to a week.
