Mānuka Honey Banana Muffins

Bake up soft banana muffins sweetened with Mānuka honey – a healthy snack kids (and adults) will ask for again and again!

Ingredients (makes 12 muffins):

  • 2 ripe bananas, mashed.
  • 1/4 cup (60 ml) Mānuka honey
  • 1/4 cup (60 ml) melted coconut oil or butter.
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups (180 g) whole-meal flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • Pinch of salt
  • Optional: 1/3 cup chopped walnuts, nuts, or dark chocolate chips

Instructions:

  1. Pre-heat the oven to 180 °C (350 °F). Line a 12-cup muffin tray with paper liners or grease lightly.
  2. In a large bowl, mash the bananas until smooth. Stir in the Mānuka honey, melted coconut oil (or butter), eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together the whole-meal flour, baking soda, baking powder, cinnamon, and salt.
  4. Add the dry ingredients to the wet mixture and stir until just combined. If using, fold in walnuts or chocolate chips.
  5. Divide the batter evenly among the muffin cups. Bake for 18–20 minutes or until a skewer inserted into the centre of a muffin comes out clean.
  6. Remove from oven and allow to cool for 5 minutes in the tray, then transfer to a wire rack to finish cooling.
  7. Serve warm or at room temperature. These muffins keep well in an airtight container for up to 3 days or in the fridge for up to a week.
