Mānuka Honey & Lemon Roasted Pears with Greek Yoghurt

Ingredients (serves 2):

  • 2 ripe pears, halved and cored
  • 2 tbsp fresh lemon juice
  • 2 tbsp Mānuka honey
  • 1 tsp lemon zest
  • 1/2 tsp cinnamon
  • 1 cup Greek yoghurt
  • Optional: toasted almonds or walnuts

Instructions:

  1. Preheat oven to 180 °C (350 °F). Line a baking tray with baking paper.
  2. Place pear halves cut side-up on the tray.
  3. Drizzle lemon juice and 1 tbsp Mānuka honey over the pears.
  4. Sprinkle lemon zest and cinnamon evenly.
  5. Roast for 15–18 minutes until pears are tender and caramelised.
  6. Remove from oven and let cool for a few minutes.
  7. Serve warm over Greek yoghurt with a final drizzle of Mānuka honey and a sprinkle of toasted nuts.
