Mānuka Honey & Lemon Roasted Pears with Greek Yoghurt

Ingredients (serves 2):
- 2 ripe pears, halved and cored
- 2 tbsp fresh lemon juice
- 2 tbsp Mānuka honey
- 1 tsp lemon zest
- 1/2 tsp cinnamon
- 1 cup Greek yoghurt
- Optional: toasted almonds or walnuts
Instructions:
- Preheat oven to 180 °C (350 °F). Line a baking tray with baking paper.
- Place pear halves cut side-up on the tray.
- Drizzle lemon juice and 1 tbsp Mānuka honey over the pears.
- Sprinkle lemon zest and cinnamon evenly.
- Roast for 15–18 minutes until pears are tender and caramelised.
- Remove from oven and let cool for a few minutes.
- Serve warm over Greek yoghurt with a final drizzle of Mānuka honey and a sprinkle of toasted nuts.
