Ingredients

1 cup pitted dates
1/2 cup tahini
2 tablespoons Manuka Hunters mānuka honey
1 cup rolled oats
1/2 cup desiccated coconut
1/4 cup pumpkin seeds or sunflower seeds
1 teaspoon vanilla extract
Pinch of sea salt

Optional:
Dark chocolate drizzle or cacao nibs for topping

Method

Add the dates to a food processor and blend until they form a soft, sticky paste.

In a separate bowl, gently warm the tahini and mānuka honey together until smooth and easy to mix. Stir in the vanilla extract and a pinch of sea salt.

Combine the date paste with the tahini mixture, mixing well until fully incorporated.

Add the oats, coconut, and seeds. Stir until the mixture comes together into a thick, slightly sticky dough.

Line a small baking tin with baking paper. Press the mixture firmly into the tin, smoothing the surface evenly.

If using, add a light drizzle of melted dark chocolate or sprinkle cacao nibs over the top.

Place in the fridge for at least one hour to set. Once firm, slice into bars.
