Matcha Mānuka Energy Bites

Matcha Mānuka Energy Bites

A no-bake snack for busy autumn afternoons

These little energy bites combine oats, matcha, and mānuka honey into a quick, no-bake snack that's easy to make ahead and keep on hand for after-school pick-ups or a mid-afternoon boost.

Makes: Approx. 14 to 16 bites
Prep time: 15 minutes
Chill time: 30 minutes

Ingredients

  • 1 cup rolled oats
  • 1/2 cup smooth nut butter (peanut or almond)
  • 1/4 cup Manuka Hunters mānuka honey
  • 1 teaspoon matcha powder, sifted
  • 1/4 cup desiccated coconut, plus extra for rolling
  • Pinch of salt

Method

  1. In a large bowl, combine the oats, nut butter, mānuka honey, sifted matcha powder, coconut, and salt.
  2. Mix well until everything is evenly combined and the mixture holds together when pressed.
  3. If the mixture feels too wet, add a little extra oats. If too dry, add a touch more honey.
  4. Roll into small balls, about a tablespoon each.
  5. Roll each ball lightly in extra desiccated coconut if desired.
  6. Place on a tray lined with baking paper and chill in the fridge for at least 30 minutes to firm up.
  7. Store in an airtight container in the fridge for up to a week.

Why This Recipe Works

No baking is required; the oats and nut butter bind everything together once chilled, while the matcha adds a gentle, earthy flavour that balances nicely with the natural sweetness of the mānuka honey.

Tip for Best Results

Wet your hands slightly before rolling the mixture into balls; it helps stop everything from sticking to your fingers.

A Handy Family Snack

These keep well in the fridge, making them an easy grab-and-go option for school lunches, after-sport snacks, or a quick energy boost between errands.
