Ingredients

  • 3 cups rolled oats
  • 1 cup mixed nuts, roughly chopped (almonds, walnuts, or pecans work well)
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/2 teaspoon ground cinnamon
  • Pinch of sea salt
  • 1/3 cup melted coconut oil
  • 1/3 cup Manuka Hunters mānuka honey
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup dried fruit (any), added after baking.
    • Some fruit is better when added during baking

Method

  1. Preheat the oven to 160°C and line a large baking tray with baking paper.
  2. In a large bowl, combine the oats, nuts, pumpkin seeds, sunflower seeds, cinnamon, and salt.
  3. In a separate bowl, whisk together the melted coconut oil, mānuka honey, and vanilla extract.
  4. Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  5. Spread the mixture in an even layer across the baking tray.
  6. Bake for 20 to 25 minutes, stirring gently halfway through, until golden and fragrant.
  7. Remove from the oven and allow to cool completely on the tray. The granola will crisp further as it cools.
  8. Once cooled, stir through dried fruit if using, then transfer to an airtight container.
